The owner of the Tu Quyen Nem Chua production facility, Mr. Nguyen Trung Tu in An Tho commune, said that to make the right and standard Nem Chua, the ingredients must be extremely fresh and delicious. In the past, people often wrapped Nem very elaborately with sticky rice straw, but now this type of sticky rice straw is not available much so people have to replace it with banana leaves.

First, to prepare, we must choose really good meat. Specifically, the type of meat used to make nem chua must be really good, just out of the oven, still hot. Once the desired meat is selected, the processor will use a sharp knife to remove the tendons and fibrous parts, then quickly slice them into thin slices.

Along with the pork skin being processed cleanly, cut into thin, even strips, the ingredients and spices are also mixed in the exact ratio and naturally fermented. After a certain period of time, the meat will turn a beautiful pink color. When An Tho Hai Phong sour sausage is ripe enough, it will be refrigerated to slow down the fermentation process.
